Delicious Mistake

Somehow my “lazy day” seems to be filled with activity. More moving this morning more boxes to dig through. Now we are on to the sporting equipment. But that’s for a whole other post. After half the day forcing myself to get settled into the new house, I couldn’t stay inside any longer and headed out for the trails.

Dilemma, I live half way between Killington and Pittsfield. I got in the car with the intent to head up Killington and by the time I drove to the end of the road I found myself turning towards Pittsfield. I was soon making my way back up Joe’s Mountain because I haven’t had enough of it in the last couple of weeks. In fact I have spent every Saturday on that mountain for the last month. Jogging up the mountain I was psyched to be alone on the trails and enjoyed an hour and a half run. I ran into Matt who builds the trails we chatted and I ran more. I saw two other hikers and two runners. The Green Mountain Trails are really worth looking into if you are in central Vermont. It was an amazing day to be in the woods! The view from the top never disappoints.

After an quick stop at the Killington Fire Station, I got home popped in a pizza in the oven and went about making this new protein shake after a friend pointed me to the website Dashing Dish. I was lured there by the Cake Batter Protein Shake Recipe, as soon as I have some more Vanilla Gaspari Nutrition MyoFusion Protein in I am definitely making that one! What’s not to love about turning a protein shake into something that tastes like cake batter.

So I tried to make one of their other recipes, but like with everything didn’t follow the directions and ended up making a totally different thing all together. So calling this one a delicious mistake. I attempted to make a Chocolate Strawberry Cheesecake Protein Shake. It was suppose to be just the strawberry cheesecake protein shake but I was out of vanilla protein so it because a chocolate strawberry cheesecake shake. However, when I went to make the shake I didn’t have any ice cubes in the house and decided instead to add coconut milk to the whole thing. What did I end up making? A Chocolate Strawberry Cheesecake Protein Mousse.

DIRT IN YOUR SKIRT

CHOCOLATE STRAWBERRY CHEESECAKE PROTEIN MOUSSE

 

Ingredients:

1/2 Cup Cottage Cheese (with or without the fat it’s up to you)

1 Scoop Chocolate Gaspari Nutrition MyoFusion Probiotic Series Protein Powder

6-10 drops Stevia Liquid Sweetener or 2 tbs Dirt In Your Skirt Maple Syrup

1/2 – 1 Cup Water

1/4 – 1/2 Cup Unsweetened Coconut Milk

1/2 tsp Xanthan Gum (look in the gluten-free section or baking section it’s the consistency of flour)

1/2 Cup Frozen Strawberries

2 Tbs Sugar Free Cheesecake Pudding Mix

Add everything to the blender. Blend on high, if you are like me walk away for about a minute or two. Come back and you have mousse*. Chill in the fridge for about an hour or two then enjoy. *I have a new blender made by Ninja and it pretty much turned the shake into a mousse. Not sure what other blenders will do. 

Ended my day making some more of a modified version of Hobie Call’s chocolate. While in Utah his brother taught me how to make the chocolate since then we have made some modifications and turned it into our own. However Hobie still gets the credit for the original recipe.
